Goji and Pumpkin Seed Energy Bombs

They provide a simple and easy snack, high in nutrients and energy, that can be eaten at any time of the day. They are especially useful if you are feeling burned out and run down, as they are packed with immune-boosting chemicals and nutrients, have buckets of bioavailable protein, minerals, and some potent herbs too.

1 heaped tablespoon coconut oil
3 handfuls of pumpkin seeds
3 handfuls of goji berries
2 Viridian Rhodiola capsules, opened up, contents added to the mixture.


The method for making these tasty treats will probably remind you of making cornflake cakes as a child.

1.    Quarter fill a saucepan with water and place a heatproof glass bowl on top to create a bain marie (remember melting the chocolate for those cakes?). Add the coconut oil to the bowl.
2.    Meanwhile, add the pumpkin seeds and goji berries to a food processor, and process at a medium speed to get a coarsely ground texture. pen the rhodiola capsules and add powder to the mix. stir well.
3.    Begin to melt the coconut oil in the bain marie. Once melted, add to the processed goji berries and pumpkin seeds, and mix thoroughly. This will give a sticky but firm mixture. Roll into bite-sized balls, place onto a plate, and refrigerate until firm.

PROPERTIES

Goji Berries – have been in the world media in recent years, with some rather astounding and notably far-fetched claims being made about them. They have been viewed as the ultimate superfood. While much of the media attention can realistically be considered hype, goji berries do certainly have some interesting effects, especially upon the immune system. Like many medicinal plants and mushrooms, they contain a group of special sugars called polysaccharides. These sugars are discussed in greater detail in the following soup recipe. However, they are known to be a very powerful stimulator of the immune system. They do this by causing an increase in the production of white blood cells.
The second thing about goji berries, and the thing that I find most interesting, is their high levels of the trace element germanium. Germanium is one of the hardest trace elements to find in our modern diet and is one of vital importance when it comes to the health of the immune system. Germanium is an important nutrient in the regulation of a group of cells called CD4 cells. These cells can be viewed as almost like the conductor of an orchestra. They essentially tell all other cells of the immune system what to do, when, and how, and play a pivotal role in the organization of almost every immune response.
Goji berries are also considered a powerful energy tonic in the Orient. This is most likely due to their protein and complex carbohydrate content.

Pumpkin Seeds – are definitely one of my favourite nibbles to have around the house. They are very high in another important trace mineral zinc! Zinc has been widely researched in recent years, especially in the context of immunity. One of the key roles that this wonderful mineral plays is the regulation of the functioning of individual white blood cells. It does this by ensuring correct functioning of their individual DNA – the internal code that programs every function of every cell in every tissue. A healthy, fully functioning DNA means a healthy fully functioning white blood cell, able to deliver its best performance when faced with an invader.
Pumpkin seeds are also a very rich source of the chemical cucurbitin, which is a powerful antiviral and anti-parasitic agent. This makes it very useful for things such as food poisoning, where the infective agent has found its way into the body via the digestive tract. Pumpkin seeds have a longstanding history as a traditional remedy for such infections.

Rhodiola - is a powerful adaptogenic herb. It helps to reduce the physiological impact that day to day stress has upon us. It does this by reducing the levels of cortisol that are secreted during the stress response. Elevated cortisol can lead to us feeling extremely burned out, can reduce white blood cell count, and can hinder digestive function. Rhodiola also has the ability to make cells in most tissues actually take up glucose more effectively, leading to increased ATP production - hence the energising effect felt when taking this herb.

Lack of energy, feeling tired or ‘drained’ are some of the most common reasons for seeking advice on nutrition and supplements.  Many things can contribute to low energy.  Some of these can include:

•    Overwork, lack of relaxation or ‘down time’.
•    Chronic stress or worry, whether from work or home life.
•    Lack of sleep, poor quality of sleep or “burning the candle at both ends”.
•    Poor diet: lack of whole foods especially vegetables, eating lots of processed or sugar-laden foods, or ‘blood sugar imbalances’ can be to blame.
•    Nutritional deficiencies.  Iron deficiency is common: ask your doctor to test your iron levels if you think this could be the case.  Lack of B vitamins or magnesium are also common factors, but virtually any nutritional deficiency can have an impact.
•    Chronic use of stimulants such as caffeine, excess alcohol consumption or use of recreational drugs.
•    Certain medications (however do not stop your medications unless on the advice of your doctor).
•    Thyroid imbalances.
•    Other hormonal imbalances or changes, particularly around the time of menopause in women.

"The basketball star’s success on and off the court comes from a natural approach to healthy living.


At 6 foot 3, Steve Nash is by no stretch among the tallest players in a game that treasures height for court advantage. Yet Nash is uniformly recognized as one of the National Basketball Association’s most respected players. Nash, in his seventh season with the Phoenix Suns, is known for his strategic thinking on the court—he can see a play developing before it takes shape—and is widely considered one of the top point guards in the game. He was named the NBA’s Most Valuable Player in 2005 and 2006. “Even at 36, after a series of injuries, thousands of miles on his wheels and the loss [to the New York Knicks] of [former Suns coach] Mike D’Antoni and [former Suns teammate] Amare Stoudemire, it’s impossible to knock Nash out of the discussion of the league’s top five point guards,” Washington Post sportswriter Michael Lee wrote after the Suns trounced the Wizards in December. “Try as you might, you just can’t. He still has enough speed, and much more intelligence, which makes him a difficult cover.” Much of Nash’s success, on and off the court, clearly comes from his diet, supplementation and fitness regimen. Energy Times: Many athletes devour carbs for energy, but few nutritionists would recommend that for the average person. What is your approach to diet and nutrition, and how has it evolved?

Steve Nash: My mom encouraged us to eat healthy. We always had a balanced diet, but you can always learn more. Obviously as it relates to my profession it’s so important. Early in my career, I thought that pasta and carbo-loading was good, and then I realized it’s not; it’s full of sugar, starches and refined ingredients, so I changed that. I stay away from processed pastas, breads and sugars. I stopped eating pasta five or six years ago. Now I eat as much raw and natural food as I can. Nothing processed, no refined sugars. I eat fruits, vegetables, lean fish or chicken, preferably wild fish or consciously raised chicken, and raw nuts and legumes. I’ve been eating that way for two years. My whole career, I’ve been eating healthy but I learn more and more every year. It’s always evolving. I like to wake up with a protein and berry shake. I also have a steady diet of fresh fruit throughout the morning. Snacks are a must since I am always traveling. I like to eat easy stuff like salt-free nuts or dried fruit. Whether it’s the NBA season or not, my diet fits into a healthy lifestyle and is full of fresh steamed vegetables and fish such as wild salmon. It might seem a bit austere, but I don’t eat rich sauces or a lot of meat.

ET: Why does your supplementation program change throughout the year and why does your fitness regimen also vary? 

SN: My supplementation program changes depending on whether I am in training or perhaps recovering from an injury during the season; then I will use a different combination of supplements to focus on that particular health concern. My fitness regimen is pretty varied. I enjoy exercising outdoors when I can, but normally I am training specifically with my long-time trainer. In Vancouver [where Nash grew up], for example, I will work out at the Steve Nash Sports Clubs that are state-of-the-art facilities and represent an eco-sustainable environment. Actually, I really enjoy working out, so even during the off-season, my mindset is that I’m still in training. During the off-season it’s not like I sit back, let it all go to fat and then show up for pre-season like, ‘Hey guys, check out my spare tire.’ It really is a lifestyle for me. In the summer I might try to add more power and strength in my routine, but I really try to enforce proper movement patterns.  

ET: On the court, you are known for your cerebral approach to the game. What is your philosophy about how our mental state affects our physical health? How do you apply your thinking or psychology for your physical health, both on and off the court? 

SN: Without a strong mental attitude, there can be no true physical health. Stress, mental anguish, depression—these are all debilitating to our physical health. I know that when I go on to the court, my body and my mind are perfectly in sync from hours of training and repetition. I am not the biggest or tallest guy on the court, so I have to be the fastest, both mentally and physically. No matter where I am, I find a way to work out. This takes creativity sometimes, though. If I’m traveling I will work out in the hotel, even if they don’t have a gym, whether it’s in the room or as a younger player I’d run the stairs or take a jump rope. You don’t need a gym to work out. A gym gives you more versatility and convenience and maybe inspiration, but you can work out anywhere. 

ET: What satisfaction do you derive from basketball, both as a physical and mental pursuit? 

SN: It’s a kids’ game. It’s competitive. You get to be part of a team, which is extremely enjoyable for me. You get to be creative. I can express myself. It’s having a place to challenge myself and grow as a player. And if you want to grow as a player, you have to grow as a person. It’s very important to my life. To have a creative outlet and be part of a team is a lot of fun. 

ET: Who were some of your favorite players growing up? 

SN: Isaiah Thomas did it all. He was my size, but he was extremely competitive, skillful and creative. He could shoot, pass and score. He was very clutch, very tough. I really admired him. 

ET: As a parent, and as a philanthropist who is attuned to child welfare and health issues, what approaches to good health do you impart to your own children? What tips can you offer other parents who perhaps have a difficult time getting their kids to eat healthy or find it difficult to make the time to keep their kids physically active? 

SN: The most important thing to remember as a parent and as a child welfare advocate is that every child is different. Every child is unique. Kids notice when you take the time to acknowledge who they are, and to find their strengths. Look at what makes your child happy and encourage it. My kids love soccer, so it’s easy to have them run around with a ball. But maybe another child loves bugs—go on a bug hunt each morning. Or race to the bus together; count stairs as you’re climbing. Make it something they know you’re into, too. There are a lot of ways to get active as a part of a daily routine that don’t require organization or leagues or massive time commitments. Scientists are telling us now that just being outside is a critical part of early development. Eating is tough; I think if you consistently present good foods, kids will gravitate towards them, even if it takes time. Be patient, keep modeling the kind of healthy lifestyle you want them to have, and they’ll catch on."

This is the season for flu, coughs and colds.  Experts are warning there could be a surge in swine flu cases as people return to work and school following the Christmas holidays.  Symptoms of flu can include fever, cough, headache, weakness and fatigue, aching muscles and joints, sore throat and a runny nose.

Flu viruses are made up of tiny particles that can be spread through droplets that come out from your nose and mouth when you cough or sneeze.

If you cough or sneeze into your hand, those droplets and the germs in them are then easily spread from your hand to any hard surfaces that you touch -  they can live on these surfaces for some time.  Everyday items such as door handles, computer keyboards, mobile and ordinary phones and the TV remote control are all common surfaces where flu viruses can be found.  If other people touch these surfaces and then touch their faces, the germs can enter their systems and they can become infected.  This is how all cold and flu viruses are passed on from person to person. 

It is therefore really important to protect yourself against catching flu. 

A poor diet and stress damage the immune systems ability to fight off viruses.  To protect yourself eat healthily and try to avoid, or at least cut down, on stress.

Regular hand-washing is essential especially if commuting or if in contact with people suffering from colds and flu. Consider Quash Hand Sanitiser (£2.08), which is a 100% natural product (no alcohol or chemicals).  This hand sanitizer kills 99.9% of harmful germs.

Kinesiology is an amazing, safe, natural and gentle health assessment and treatment method, which is designed to provide the practitioner with information about the functioning of the bodies systems in terms of what is stressing the body and what is needed to negate these stressors and so improve the its functioning.

We define stress as being more than just emotional / mental stress. We see it as anything that significantly disrupts our homeostasis (balance) on a physiological level, where it pushes the body beyond its normal acceptable range of tolerance. This results in a resetting of homeostasis to a less than ideal level and the end result of which is manifestation of symptoms.

What can Kinesiology assessment help us identify?
  
All Kinesiology methods involve muscle testing. Overall this enables the practitioner to identify pretty much whatever is stressing the body including :
physiological stressors (e.g. nutritional deficiencies, toxic excesses, lack of sleep etc)
mental / emotional stresses (inc. fears/phobias etc)
mechanical stresses (such as poor posture/residual effects of injuries etc).
electro-magnetic pollution stressors on your health

Thus the job of the Kinesiologist is therefore to identify the location and nature of major underlying areas of stress and imbalance(s), to establish whether it is structural, biochemical (nutritional / phyto-chemical deficiency or toxic excess), or mental / emotional.

By working with the whole person and allowing the body's own responses to dictate the process, Kinesiology helps re-establish a more normal homeostasis and hence stimulate the body's innate capacity to heal itself.
However, like all Complementary Medicine methods, Kinesiology is not meant to replace conventional western medical differential diagnostic methods. This allows the patient to get the best of both worlds by ideally providing an integrated picture as to what is happening.
The results are profoundly effective and can include pain relief, postural improvement, release of stress, reduction of tension, identification of allergies/sensitivities, increased energy, and better co-ordination etc.

"Last night's lecture was on Kinesiology and was presented by Sean Kulyk a kinesiologist and homeopath.

A really informative lecture, with in-depth information and demonstrations, well worth watching!

Kinesiology is a safe and natural method of health assessment that evaluates how we are functioning, using the theory of acupuncture and chiropractic principles. Kinesiology is to do with knowledge and the study of movement and is used to assess conditions using muscle testing.

Specific muscles are related to specific meridians. So muscle testing allows for assessment of specific meridians. Muscles can be in three states; weak, normatonic (strong, but a known stressor will weaken it) and hypertonic (strong, but a known stressor will not weaken in).

Muscle testing enables more specific information of an individuals status to be assessed. Testing also allows for assessment of supplementation requirements and how much and for how long supplements may be required for. It also takes into account life factors which play an important part of the health of an individual.

The location of the symptoms is not necessarily where the problems are. Kinesiology treats people who have symptoms which are indicative of poor homeostasis due to many stresses in their life, helping to bring about a better homeostasis and in turn reducing symptoms.

Structural, biochemical, mental/emotional factors are all considered in kinesiology. Kinesiology is about good balance. Overall, finding the imbalances and helping to re-establish a better balance. "

Leek, Onion, and Feta Tart, with Jerusalem Artichoke Mash

This beautiful main meal is a creative twist on the good old British “Pie ’n Mash”. It is filling, nutritionally dense, and great for encouraging the growth of good bacteria in the gut.

1 large red onion
1 large leek
1 clove of garlic
Readymade puff pastry (we all need a shortcut every now and then)
Feta cheese
4–5 Jerusalem artichokes
1 teaspoon English mustard
Salt and black pepper to taste

Preheat the oven to 180°C/350°F/Gas mark 4.

For the tart filling
Peel, and halve the red onion, and cut widthways into slices. Coarsely chop the leek into thin slices. Finely chop the clove of garlic. Add the three ingredients to a pan with a little olive oil, and a pinch of crystal salt. Sauté until the onion and leek have softened and have started to almost caramelize together. Keep to one side.

For the tart case
OK, I admit it, I usually cheat on this one and get some ready rolled puff pastry. Pastry and I don’t always get along, so I find it easier. Simply roll out the pastry, to a thickness of only a few millimetres. Line a 25 cm (10 inch) tart case with it, discarding the excess. Fill the case with baking beads, or dried beans, and “blind bake” for 3–5 minutes, to enable the bottom of the case to just start to get crispy. Remove the baking beads, then add the leek and onion mixture. Crumble over some Feta cheese, enough to give a light covering of the filling mixture. Bake in the oven for 15 minutes, or until the pastry rises and starts to go crisp and golden.

For the Jerusalem artichoke mash
Simply cube the Jerusalem artichokes, and boil in a pan until soft. Drain, then return to the pan with a little olive oil, and the English mustard, and mash until smooth.

To serve
Take a good slice of the tart, a few dollops of the mash, and serve with a good, colourful, mixed side salad.

MEDICINAL PROPERTIES
Onions – being a close relative of garlic have a similar chemistry and similar medicinal properties, although to a slightly lesser degree. Onions contain a fabulous compound called inulin, that works as a prebiotic agent. This means that it encourages the growth of good bacteria in the gut, by providing them with a food source. This helps to increase the numbers of the good, and decrease the number of the bad, fine-tuning digestive health when consumed regularly.

Leeks – are another of the allium family, delivering equal amounts of inulin.

Jerusalem Artichokes – contain a very powerful prebiotic called fructo-oligo-saccharide or FOS for short. This magical sugar goes way beyond the call of duty of most prebiotics. Rather than just being a food source for the good bacteria, it contributes to gut healing. When the gut bacteria feed upon FOS, they actually ferment it down.

There are two parts to our immune system: the acquired and the innate immune system. Conventional medicine has tended to focus on the acquired immune system.
